
During the week of March 22, the Jefferson County Health Department inspected 41 food establishments. Scores ranged from 77 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of March 22 are listed below. They are all routine inspections unless otherwise noted.
■ Antonia Middle School, 6798 St. Luke’s Church Road, Barnhart, scored 100 on March 23.
■ Autumn Ridge, 300 Autumn Ridge Drive, Herculaneum, scored 95 on March 24. Violations: dishwasher with mineral buildup and residue; wash cycle not reaching 110 degrees; and black residue on wall under dish table.
■ Corpus Christi Center, 6020 Old Antonia Road, Imperial, scored 99 on March 27. Violation: ice handle touching ice.
■ Crispy Edges Eats and Shakes, 700 Collins Drive, Festus, scored 83 on March 27. Violations: employee didn’t wash hands before putting on gloves; incorrect sanitizer for dish machine; food products stored on floor on walk-in cooler; Febreze stored with single-use items; and soda machine leaking.
■ Crystal City Marathon, 801 N. Truman Blvd., Crystal City, was inspected on March 26. No score given due to low priority.
■ De Soto Elks, 1520 Clarke St., De Soto, scored 89 on March 26. Violations: no paper towels at hand sink; black residue on soda gun nozzle; torn gasket; and soda nozzle drain tray biofilm growth/grease buildup in fryer access door.
■ Fatboy’s Saloon, 301 E. Main St., De Soto, scored 77 on March 26. Violations: no staff with manager food safety certification; employee washed hands in wash basin of dish sink; several dented cans; soiled water filter in soda room; side door left open; no lids on sauce bowls; grease buildup inside door to fryer; soiled handicap toilet; concrete floor of freezer room not sealed; possible rodent droppings behind deep freezers and under shelving units/residue buildup around grease trap lid; peeled and dented drywall in freezer room/water-stained ceiling tiles/hole in two walls and restroom door.
■ Fox High School Outdoor Concession, 751 Jeffco Blvd., Arnold, was inspected on March 24. No score given due to low priority.
■ Fu Yu Chinese Kitchen, 4521 Gravois Village, High Ridge, scored 90 on March 27. Violations: No items in walk-in cooler have dates marked; damaged screen door; broken corner of prep table; and holes in wall.
■ George Guffey Elementary, 400 13th St., Fenton, scored 97 on March 26. Violation: dented can.
■ Glenda Ennis Home Child Care, 5888 Terrace Drive, House Springs, scored 100 on March 25.
■ Hardee’s, 1305 Veterans Blvd., Festus, was reinspected on March 23 and March 26. No score given.
■ Hematite Head Start Center, 3680 Hillsboro Hematite Road, Festus, scored 96 on March 25. Violations: dented can; and soiled shelf.
■ Herculaneum High School Indoor Concession (old gym), 1 Blackcat Drive, Herculaneum, scored 100 on March 23.
■ Hillsboro Elementary, 13 Hawk Drive, Hillsboro, scored 100 on March 27.
■ Hillsboro Food Pantry, 10399 Hwy. 21, Hillsboro, was inspected on March 23. No score given due to low priority.
■ Hillsboro Intermediate School, 12 Hawk Drive, Hillsboro, scored 87 on March 23. Violations: eggs stored above dressings in walk-in cooler; apples displayed without protective covering; and evaporator fan box pipe leaking in walk-in cooler.
■ Hillsboro Junior High School, 12 Hawk Drive, Hillsboro, scored 98 on March 23. Violations: faucet leak; and drain hole open in floor near dishwasher.
■ Immanuel Early Childhood Academy, 6500 Metropolitan Blvd., Barnhart, scored 100 on March 24.
■ Jefferson R-7 Preschool, 1265 Dooling Hollow Road, Festus, was reinspected on March 25.
■ John’s Butcher Shoppee, 503 N. Mill St., Festus, scored 94 on March 26. Violations: incorrect sanitizer solution.
■ Kasabi Hibachi, Sushi and Ramen, 343 N. Creek Drive, Festus, scored 89 on March 24. Violations: incorrect sanitizer solution; dead and live cockroaches behind deep freezers; single-serve items stored under soda drain lines; and debris on floor by fryer.
■ La Petite Academy, 3607 Richardson Square, Arnold, scored 84 on March 23. Violations: no staff with manager food safety certification on site; hand sink blocked; unlabeled spray bottle; and food debris on reach-in cooler and freezer, and in bottom oven drawer.
■ La Tapatia, 250 First St., Hillsboro, was reinspected on March 24. No score given.
